Turtle Soup Recipes

I'm planing to cook some turtle soup for NYE dinner at my house. I've found the Commander's recipe online and it looks good. I also have the My New Orleans cookbook by John Besh and his recipe uses orange juice in place of about a 1/4 of the veal stock. Orange juice? Really? Is he trying to add sweet/acid?

Anyone have a good recipe they prefer?

The Commanders version is basically perfect so that is what I would shoot for

Are these turtles of ´furtive´capture? Isn´t it illegal to eat turtle? Inquiring minds want to know.

No, we eat the hell out of turtles here in the dirty South.

If this is the first time you are cooking turtle soup, be careful not to overdo the lemon. Too much lemon peel will make your soup bitter.

The Commanders recipe is very good. But I prefer the Plantation Cookbook version. You can find it in the TD F&D Board Recipe Book at the top of the F&D home page.

Not to hijack, but I had some turtle soup from world deli at a Xmas party and it was very very good.

But why the hell would any recipe call for orange juice?
