re: Re season a Dutch oven - tigeryat
I would not think a pressure washer would remove all the old seasoning. Sandblasting would strip it clean....

re: Re season a Dutch oven - tigeryat
The "clean oven" method gets your pots very hot and there is a risk of warping. If the pot is an antique or family heirloom, I would use another method. Chemical oven cleaners will work also, it just takes a little elbow grease. Electrolysis method works too, with little scrubbing. Below is a l...

re: Where to sight in a rifle around Lafayette - tigeryat
The Iberia Parish rifle range is open 12:00 - 4:00 on Wednesday to the general public. [link=(http://www.iberiaso.org/firing-range/)]Here[/link] is their website. They are also open Saturday 8:00 - 3:00. Everything else is private, as best as I know, such as the Fuslier Complex nears Arnaudville....

re: My roasts won't fall apart. - tigeryat
Sometimes you just get a bad cut of meat and it will never get tender. I usually buy choice. 4-5 hours at 250-300 should do it. I cook a chuck or shoulder several times a month. It's always falling apart. I did a whole pork picnic like this last weekend and it was falling off the bone. ...

re: Flooded Cast Iron - tigeryat
I doubt you could damage the cast iron with a brillo pad, but it will take a lot of scrubbing to get down to bare metal. You need to break down the old seasoning and rust with oven cleaner or by electrolysis, then scrub a bit with your brillo. I use bar keepers friend and a brass brush to get the ...

re: Flooded Cast Iron - tigeryat
If they were lodge pots less than 10 years old, I would probalby discard them and buy new ones. If they are family heirlooms, I would strip and reseason. I'd strip them down to bare metal using either the oven cleaner method or electrolysis. Check out [link=(http://www.castironcollector.com/cle...

Rocky's is solid. I ate there saturday and had a RB PoBoy with a side of Mac N Cheese. I made the mistake of ordering brown gravy rather than red. I've never done that before but just thought I should try it. Red is better. ...

re: Grilling Tuna--Educate me please - tigeryat
You can do it on the egg for sure, but I find it easier to control the heat and get the perfect end result with a black iron skillet and a little butter or olive oil. Get a hot fire and get the internal temp to 125 and take it off. The filet needs to be at least 1.25 to 1.5 inches thick or it tend...

re: Have you ever frozen turkey gravy? - tigeryat
Great idea! The gravy is always the last side to prepare and gets rushed. I like to separate the fat from the other drippings in the fridge and then stir in the roux. I never have time to do that on Thanksgiving day. ...

re: Help me plan NO to Morgan City to New Iberia to Laffayete - tigeryat
It's only a 2 hour drive, I drive it often and there's lots of food, but not many places I would drive out of my to get to. But's maybe that's just me. Mosca's in Avondale/Westwego is about 20 minutes from NO, and probably the best restaurant on that stretch of road, (old hwy 90). Oysters Mosc...
