Mine in no particular order. Testicles (calf, lamb and rooster), sweetbreads, tripe, hogs head cheese, pork brains, pork neck bone, liver (calf, chicken and pork), and raccoon.

Sweetbreads are tremendous to eat, coat with seasoned flour, saute, and top with boursin demi-glace. Hog head cheese can be made more palatable to the sqeaumish by nukking them to melt the aspic. Liver of any animal can be made into a great dish by looking at it differently, you ever had rice dressing or maybe some pate?

I liked all the things I mentioned except the pork brains.
I also forgot to add that a German au pair once gave me some raw ground pork blended with raw egg, onion, salt and pepper that was quite tasty. But the thought of eating raw pork made me gag and spit it into the waste basket.

I remember eating a piece of octopus at Kamado's on college, and upon biting into it, it released the nastiest white discharge (yeah, haha)... I had to go in the bathroom and spit it out... fricking disgusting...
