Boiled eggs in gumbo

Who all does this? I always have but recently was around a bunch of guys that had never heard of it. Found it very strange

I've seen it in a gumbo before, I'd rather it not in mine, but it's not as common as eggs in a stew.

I do it in turtle soup. Never done it in gumbo, but can't see why it would be bad
Sometimes potato salad has boiled egg in it. I have had it that way and it was good. Might have to try it

I've seen it done once or twice. I like to eat my boiled eggs cold, so not really a fan.

I've had it from people from Lafayette and Pineville of all places

Im from eunice and ive been eating eggs in my gumbo for 30 years. Almost everyone i know eats them too.

It was always a standard growing up in Gueydan. At least with shrimp/seafood gumbos. I don't think my family ever included it in chicken gumbo but I could be mistaken.

I once heard from a legitimate coonass that boiled eggs in a chicken & sausage gumbo helped soak up the grease.

I've seen it all my life and done it quite a bit. It's to stretch the gumbo just as all my old working class Italian friends moms and grandmothers put them in their red gravy. Same reason. You have a large family you did it.
And I've seen them put in raw and poached rather than boiled and they have a better flavor.

It's awesome in gumbo. Some people break open eggs and let them boil in gumbo too.
