Chili recipe.

Buy the Mexene brand of chili powder. Follow the directions on the back, adding beans if you wish. Add a few minced fresh chilies to the pot. You're done and it will be good.

2 lbs. cubed beef (chuck roast or already cut stew meat or soup meat)
chopped onions, bell pepper, garlic (Or 1 container of Guidry's)
1 large can chopped tomatoes
1 bottle dark beer
beef stock
2 T. medium hot chili powder
2 tsp. ground red chipotle pepper
1 T sweet paprika
1 tsp. ground cumin
1 tsp. Mexican oregano
1 tsp. cocoa
1/4 tsp. cinnamon
Salt to taste (I season the meat with a seasoning blend so there is some salt in the pot)
Sear the beef in hot oil, toss in and wilt the chopped veggies, add the dry ingredients, followed by the beef stock and beer. Simmer on a low fire all afternoon, and add the beans near the end if you're using them.
If I add beans, I use Trappey's Red Kidney Beans in Chili Gravy and black beans.
This is only a guide. I don't usually measure, but the first time I made chili without using some kind of chili mix where someone else figured out the proportions, I needed to measure and this is the result. Sometimes I also add Italian sausage (out of the casing) which I have browned. Sometimes I add dried anchos or guajillo peppers which I have rehydrated. Instead of beef stock, you could use beef base.
Instead of all of those spices, you could buy Penzey's Chili 9000 and use it. The flavor is delicious.

Or if you want to go the easy way:
6 large cans of petite diced tomatos
4 cans dark red kidney beans
4 cans mexicorn
2 cans of corn
4 cans rotel - pick your flavor
4 pounds Ground beef or Ground Turkey
2 packs ranch derssing powder mix
6 packs taco seasoning
2 large crock pots
fritos
cheese
Drain Corn and kidney beans. Add all can ingredients evenly to the two crock pots. add 1 taco seasoning pack and one ranch dressing pack to this and mix up. Brown 4 pounds of meat adding the remaining 4 packs taco seasoning when it's almost done. Drain. Add to crock pot, mix well, set on high, switch to medium or warm when you're at the desired temp.
Did this yesterday. I like to use ground turkey cause it's cheaper and healthier, and I can't tell the difference.

I call that dump soup and I've never understood why people like it. I don't care for it at all myself, but people seem to eat it.

I enjoy it. It's easy. Takes no effort. I must've never had real good chili before, because this tastes fine to me.

I use ground venison, and thin slices of smoked sausage. Both browned before adding to pot.
Sliced baby portableo mushrooms
Yellow onion for stronger flavor
Sliced bell pepper
Kidney beans
Diced tomatos
Jalapeno peppers sliced (add seeds)
Fresh garlic minced
1 of a badass little 1 1/2 inch pepper I have in my freezer. IDK the type
