I'm going with brisket...although I will start it at 8am then go golfing...putting the wife in charge of re-stoking the hickory chips. I hope she can keep focused for the 4 plus hours I am gone...although I doubt she will keep my tradition of a new beer every
time the chips get re-stoked, about every 30 minutes or so.

Grilled marinated chicken breasts. Half will get chopped up for chicken salad sammiches during the weekend. Also got about 20 jalapenos I just picked. Will throw them on the grill to use in hot sauce.

Fresh red snapper on the half shell and/or lemonfish steaks. Thinking some good American craft beers followed by some good made in the USA small batch bourbon. I am very patriotic.

i'll be in cincinatti at great wolf lodge hopefully drinking heavily as the kids run around. probably nothing exciting from a culinary standpoint though.

Ribs as the main course. Baked beans and grilled veggies for the sides.

Will be packing brown sugar on the ribs tonight...can't wait.

On the grill: ribs -- country and baby back; chicken; sausage -- smoked and green onion; hamburgers for the kiddies

Sides: baked beans, broccoli salad, smothered potatoes

Dessert: blueberry pound cake, homemade ice cream

I stopped eating last night in anticipation.

1. Smoking chicken wings, marinating in buttermilk, lime, and hot sauce over night. Will either crisp on the grill if necessary or if my buddy's still have their small fryer lying around, will try doing this thing I saw on tv where you deconstruct the wings then batter them and deep fry them. Prob won't do many like that if so.
2. Pork shoulder with typical rub, per other thread stealing that blue cheese cilantro coleslaw to go with it.
3. Burgers
4. Brats/dogs
5. Smoked spare ribs with a Korean glaze
6. Mac and cheese that I will cook in the smoker to see if it does anything to them, although I doubt it will other than having some pork butt drip into it possibly.
7. Random assorted veggies.
8. Peanut butter pie
9. If I can find them for less than an arm and a leg, crabs, because I've never had smoked crabs and I want to see what happens.
10. Beer, pool, Merica.
