Jambalaya Festival in Gonzales

It's this weekend. I've always seen signs for it but have never been. How does this thing work? Does the general public show up and just go from booth to booth eating jambalaya? Can you try/buy anyone's jambalaya, if so how do you know who's is good?

I am cooking in the contest today at 11:30. You can buy jambalaya from the festival booth. Cooks are not allowed to serve from the competition pots to the general public. Heck, they won't even let the public under the tent where the cooks are. After we turn in our sample box to the judges, the pot we cook is turned into the festival to be sold so you will be buying competition jambalaya. You just will not know who cooked it.

It should all be good! Jambalaya cooked over a wood fire is delicious!

Yeah it seems like there are pretty strict rules in this competition. Unlike the chili cookoffs I've been to the public doesn't vote, it's all up to the judges.When does the competition jambalaya start getting served?

It's gonna be tough though, with the Southern Fried Festival up in West Monroe pulling people from all over the nation... Good luck...

When you be a good time to show up? I got family from Colorado and kids under 5 to balance. Any suggestions? I want to get a good sampling.

Their website is lacking in info. I can't find anything about parking or entrance fee. Anyone happen to know about either?

The cooks cook the jambalaya, it is judged and then boxed up and sold. You don't know whose you are getting and it is not always good. With the limitations the cooks have, the jambalaya there is never the best by my standards, but it is authentic.

Just wondering what the requirements are to be a contestant. Is it simply the first "so many" people to apply? Or do you have to cook something first?

If there's some kind of "test" the jambalaya should be pretty good. If is't just ther first people to apply, who knows what you'd get. I could apply and my jambalaya would probably suck.

you get a pretty good sampling of Jamabalaya's

But they are all cooked with ingrediants provided ( no secret ingediants) by the fest so there is nothing out of the ordinary.

no entrance fee, and parking is wherever you find a spot. Typically it's all along the streets. I haven't been in a few years, used to go all the time, but the last time i went it was like this and has been the same years past.

And what does 'hand sampling' mean? Can't you sample your food for proper spice and seasonings?

Has it always been like that? Sounds like the type of thing lawyers and insurance agents made happen to keep the event from getting sued because someone used spoiled meat.

Requirements are that you think you are good enough that you pay 250 to enter.


For me the contest is more about who has the best technique rather than who makes the best since you are limited on ingredients.

I knew about the ingredients and wood fire rules.

It's kind of the IROC of cooking challenges.

Just sad that any goofball with $250 can compete. Just because you have the money don't mean you can cook. Bill Gates probably sucks at cooking.
