I wouldn’t consider the first Die Hard as a heist movie. To me, a heist movie follows the people pulling the heist, like the Oceans, Reservoir Dogs, etc.

I guess you don't consider it a Christmas movie either..

Of course it was a heist movie. Hans was trying to crack the safe of the Nakatomi Plaza and steal hundreds of millions of dollars.

The top tier heist movies would be:
The Sting
Ocean’s 11
Inception (if we consider it a heist movie)
Snatch
Lock, Stock, and 2 Smoking Barrels
Hell or High Water
The Town
Heat
Reservoir Dogs
Layer Cake
The Departed (if that is a heist movie)
Matchstick Men
Inside Man
The Spanish Prisoner (amazing how David Mamet made an engaging heist film with no cursing, nudity, and minimal violence)

American Animals is another great one that hasn’t been mentioned yet (same with Layer Cake which I love).

Some other good ones that aren’t quite top tier:
Sexy Beast
The Gentlemen (if it’s a heist film)
The Last Seduction
Nine Queens (Argentine film)
Confidence

Fwiw I haven’t seen Rififi, Logan Lucky, Baby Driver, or Out of Sight but want to watch those for sure.

How did I forget Dog Day Afternoon? Amazing movie

One that got good reviews but that I didn’t care for (by the same director) is Before the Devil Knows You’re Dead.

Bruh, c'mon.

The point is that the plot didn't center around the heist and the criminals. Other than their basic motivation, we barely knew anything about them or how they planned it. The movie wasn't about the heist; it was about a cop named John McClane and him getting caught up in the middle of terroristic plot.

If you can't see the difference between a movie like Die Hard and a movie like Ocean's Eleven and not understand what is meant by "heist movie," I'm not sure what else to say.
