This was his NC year with a halfway decent defense.
Somewhat similar as Miles in ‘06 when he couldn’t get that team prepared.
That team was a NC team and miss-fired at AU and FL

If you have some time before you cook, try a sample size. It may not be exactly 1:1, but should put you in range.
Buy a can of beans, cook some sausage and rice proportional to the servings then calculate the scale up. Should get you close to what you need and buffer up a bit.

I’d suggest getting a plastic champagne. Academy has them. It looks like heavy duty laundry basket. You may have seen shrimpers and crabbers use them to haul their catch.
Also buy a round plastic tub. WalMart carries them. The champagne will fit in the tub.

This is what I’d do too and pitch in the first $100 to the pot.
I get it’s about a third of the cost of a new rebuild, but considering how much you spend in a season, $100 is a drop in the bucket and well worth getting everyone off your rack.

Honestly, overcooked garlic is bitter and that may be whats leading to the "tarry" taste.
I would skip the frying in olive oil and saute just butter just until you smell the garlic, like 60-90 seconds.
Then add your seasoning shut down the heat and spread over the bread.
