I also have never been to NY but me and 3 others are going there in March, all of us for the first time. We are staying a few blocks from TS.
Terribly crowded, tourist vibe is off the charts, food and bar situation is very bad. Stay below ~23rd in general is good advice.

It's just very packed and touristy. Once you get into TS you have to shuffle past people handing out flyers for shows you don't want to see, tourists stopping in the middle of the sidewalk to take pictures or look at maps, and you're surrounded by terrible chain restaurants and cheesy stores.
That being said, if you've never been, Midtown is around all of the typical tourist attractions, which is good. There's just so many incredible neighborhoods with more of a local feel to it. But I have to travel to NY fairly often for work.

I stayed at the New York palace, it was only about a block from Rockefeller center, would highly recommend

We've been several times, and I prefer Newark to LaGuardia. It's usually been cheaper and quicker to midtown Manhattan. But I've flown to both multiple times and no big issues to speak of. Haven't used JFK because it's been more expensive when I've checked it.
I typically use Airlink for to/from airport transportation. You can get a shared van that drops 3-4 groups of people off at their individual hotels. Or you can pay a little more & have a private sedan directly to/from your hotel. I have never taken a taxi from the airport, so I don't know what it costs.
For your first trip, Times Square area is definitely the best location to stay for tourist convenience.

I personally don't like Times Square and don't stay there when I visit New York (I've been about 6 times), but I tend to agree with the recommendation that if it's your first time in NY, and you can tolerate the crowds, it's fine to stay there.
I would also recommend staying in a different neighborhood if you ever return.

I haven't ruled out airbnb. Didn't bring it up to the wife yet. Anybody have experience using this? I've never been one to care about hotel rooms, I just want a place to crash and shower when I'm out of town.
TBH, Airbnb in NYC ends up costing more than a hotel. it's not worth it.

I was in NY for Christmas and we used an AirBnB and couldn't have been happier. But this was for six people (three couples), so we decided on a 3b/2ba apartment in Flat Irons over paying for three separate hotel rooms.

I would be cautious about using airbnb. Most places are illegally renting out their space and I have heard a few instances of security not letting people stay there. Just do your homework and maybe ask the question if it is legit allowed or not.
The most recent experience I have had w friends using airbnb involved them having to pretend to be some Chinese girls cousins for the weekend

We'll do some research on restaurants and whatnot but I mean...we are tourists. I'm sure we'll do some tours and see the sights and do other touristy-stuff. And as for crowded, it's NY so I expected it to be super crowded anyway lol
So on the food/bar topic...anywhere you'd recommend for some first timers?

Resy and The Infatuation apps. I haven't used them myself yet though but they were highly recommended.
Also helpful: Subway Map Grab the .pdf. There is another map for the buses and the MTA Bus Time app has tracking if you are interested.

Yes, but generally you can walk a couple of blocks away from Times Square and hit up good restaurants and bars that aren't so touristy.

but for first timers who want to be tourist, it can be great as well. I usually tell people stay a few blocks away, but close to TS, if they are new to Manhattan
