Germany (Munich) and Europe for 7-10 days…

I’ll be heading to Munich, Germany for 7 days in July. I’ll likely extend the trip a few days and see some surrounding areas.
My wife and I will be traveling together for the Germany portion, but it’ll probably be me and a friend or two extending after the initial 7 days in Germany.
I do plan to go to Dachau, but I don’t want the entire trip to be so heavy and dreary. Other than that, Eagle’s Nest is one of the few things I have pinned as something I’d like to do.
I’ve got a few beer hall and restaurant recommendations as well. We’re mid-30s, good shape, enjoy some history, cool sites, beers, and having a good time. No interest in partying/clubs and relatively low interest in art.
Any other recommendations around Munich? Day drives or train rides?
Which countries are easily accessible by train? We’ll be staying in Munich but if we can do Zurich or a similar city/country in a day that’d awesome too?
What other German cities do you recommend? Berlin? Frankfurt? cologne? Hamburg? Düsseldorf?
Side question: what countries/cities are good for 1-2 day trips? Budapest? Prague? Amsterdam? Zurich?

All pretty far if you are just spending a couple of extra days (you DEFINITELY don't want it to be Frankfurt which sucks for tourists, hard).
Bavaria is filled with beautiful towns. Rothenburg, Nuremberg, Bamberg, Fussen, go up to the Zugspitze, Oberammergau etc. I would do that.
You can also go into Austria and see Salzburg or Innsbruck

Take a ride to Garmish real nice town. Ride the lift to the top of Zugspitze. The wife would probably enjoy both. Dachau is something to see to say the least. Give yourself time. Lots to read and take in.

I always highly recommend renting a car for that area, a lot of stuff is not easily accessible by train. Dachau for example, there are buses there but its going to take a lot more time.
The alps are fantastic so many things to do there from castles to views to ski towns etc.

Dacchau is a very moving experience but it is close to Munich and can be done in a half day.
For an easy day trip you can drive up the Romantic Road to Rothenburg.
In the other direction you can go to Salzburg for the day, then drive on the highway to Melk, planning your arrival for late afternoon while it is still daylight, then drive the rest of the way to Vienna through the picturesque wine country on the road that runs along the bank of the Danube. Then spend a few days in Vienna which is my favorite city around there.

While in Munich, stay near the Viktualienmarkt - very central to most major sites with good tram stops. You can do most everything in Munich in 5 days including Dachau. Our best meal of a 2 1/2 week trip was at Keko - a Turkish restaurant in Munich.
If you are going to the Eagle's nest, then just go on to Salzburg since you are almost there. You can do a tour there from either Munich or Salzburg but it is much closer to Salzburg.
There are several other great recs others suggested like Zugspitz.
I did something completely different when there this past summer. It might fit your timeline of 2-3 days better than other bigger cities. Regensburg is only about an hour by car from the Munich airport. It is like a mini Prague. The Diet (parliament) of the Holy Roman Empire met there. It has a cathedral that (while being renovated) rivals St. Vitus in Prague. Very easy to do in 2 days. It's a University town so it has a young and vibrant population and is not overrun by tourists. That area is the Wheat Beer center of the universe. And if you include Kelheim and the Altmuhltal river area which is right next door, there are a bunch of outdoor activities and historic sites. We hiked from Kelheim to the Weltenburg Abbey for their world famous Klosterbier. Worth considering and then you can just do an easy drive right back to the airport in Munich to fly out.

Went to Amsterdam in August and it was great. Fun city. Kind of like a Dutch New Orleans with better art museums.

IMO a great tour of that area would be to rent a car and go to Neushwanstein, stay the night in Innsbruck, drive to salzburg to stay the night, Eagles nest, Herrenchiemsee, etc. Plenty more to do all around there also. That's only like an 8 hour loop.
There's some other great castles all around that area.

My wife and I will be there too in July. We plan to spend a couple of days in Lucerne Switzerland. You can fly to Zurich for about $120 r/t and catch a 30-40 minute train ride to Lucerne. The Swiss Alps are pretty spectacular.

Driving was very easy overall. I drove through Switzerland, Germany, and Austria. The only hard part was picking up and dropping off the car. We did this out of the main train stations - the busiest part of any European city. Bad idea but worked out ok. It would be really easy to do it out of the Munich airport. Driving to Garmisch or Salzburg or Regensburg is easy. Just don’t drive in the left lane. The guys in the BMWs going 120 mph will let you know.

Wife and I were just there for Oktoberfest. We did two day trips. One to Lindau (small island on Lake Constance) from there you can take a boat ride to Austria and/or Switzerland. Pretty cool to stand there and see the other countries/Alps from the island. We also did a day trip to Salzburg from there. Another great town with tons of history and fantastic scenery.

This must be purchased and affixed to the windshield BEFORE entering Austria. There are instructions on the sticker backing to show where to place so it can be read by the scanners. The vignette can be purchase at any gas station along the autobahn. There are many gas stations that are accessible from the autobahn. There is a map on the website to show which roads are covered by the vignette.
You will also need an IDP for driving in Austria. You can get 1 at AAA.
Driving
All slower traffic to the right. On the A8 heading south, there are several places where there will be no speed limit. The left lane will have cars/motorcycles going as fast as they can and all slower traffic needs to move to the right. German drivers will teach you how to do it.

This is a fantastic drive and great scenery.
Bring a light jacket or long sleeve shirt to Eisriesenwelt. It is 32°F inside even in July. 1400 stair steps in total. 700 up and 700 down.

Sounds like a great trip! It is easy to underestimate the time it takes to travel.
Munich itself has a lot to offer plus day trips to Dachau, to Nurnberg or to the mountains and lakes south.

I agree with the poster who said just extend your trip to Salzburg. You will be much closer to Eagle’s Nest and can also get in a trip to that castle that I won’t even try to spell. We also did a really cool salt mine tour just outside of Salzburg. I don’t have the name but I’m sure you can find one easy enough. My sister-in-law is a huge Sound of Music fan so we also did that tour and it actually turned out to be quite nice. Everything in the area is so beautiful. The trip to see the church where they film the wedding was absolutely stunning and we could see Eagles Nest from there at one point on the drive. (It was much higher elevation than where we were. The driver stopped at a look out point and pointed out where it was)
We did a Dachau tour and while it’s very sad it wasn’t a whole day thing so it wasn’t like it put some dark cloud over an entire day.
