PC Builders - Check my spec

Haven't built a PC in 5 years, but will be building a new one soon. I've been doing a somewhat "quick and dirty" hypothetical build:
Processor: Intel i7-6800k
Mobo: Gigabyte GA-X99- Ultra Gaming
HDD Raid Set #1 (RAID 0): 2x Toshiba OCZ RDA400A 256GB
HDD Raid Set #2 (RAID 1): 2x Corsair Force LE 480GB SSD
RAM: G.Skill Ripjaws V Series DDR 3200 16GB x 2
Vid Card: Gigabyte GeForce GTZ 1070 8GB
PSU: Corsair RM850x
No cooling system or case yet. Total (rough) cost so far: $1950
I'm considering a Deepcool Genome case (comes with a liquid cooling system already), but not set on any particular case.
Thoughts? Is it just too much CPU for the buck? I'm not opposed to AMD processors, but Intel seems to be spanking them recently in nearly every benchmark and realworld metric for comparably priced processors. I suppose I could step down to an i5 though.

You absolutly do not need a 2011-v3 mobo/cpu unless you need the extra PCI lanes for SLI. Even then its really a marginal upgrade.
Drop down to a 1151 socket Z170 motherboard and i7 -6700k. Really you can get away with an i5, but you have the budget to push it to an i7.
You dont need 32gb ram unless you are doing some serious editing.
For the budget, get a GTX 1080.
ETA: im assuming this is a gaming build. also, would help to know what resolution and frame rate you are shooting for.

What is your goal? What will you be playing, and at what resolution?
That's probably more CPU than you really need, tbh. I'll defer to experts but a comparable i5 will probably be good for any gaming rig.

Goal is gaming, most assuredly. Now, will that mean the most robust, intense games? Probably not.
So, spec down to an i7-6700k and Mobo to match, then 16GB of RAM, but upgrade to a 1080.
Anyone seen much benefit from SLI these days? Never got into it initially, but I remember reading that the benefits (for gaming at least) were nowhere near being cost effective.

If you are just going for normal AAA titles at 1080p, you could step all the way down to an i5 and RX 480. Always get the 8GB version though - 4GB isnt enough for many games at high settings.
SLI is mostly title dependent, some work well with it while others dont work at all. In either case, its always best practice to buy the best single card solution in your budget and consider adding a second card as an upgrade later down the road.
eta: There are 2 ways of going about building a gaming pc.
1) build the best machine to fit a specific budget
2) build to spec of a specific res and rate
pick which of those you want to do, and we can get you hooked up.

I have an i5 2500 build with 16 GB of ram, and a mid range video card that runs 1080p and 60fps. It runs all games smoothly and no crashes or random issues.

I do with my 970s for my 1440p monitor (paired with a 2500k). It'll certainly help even more once I get my 4k TV in my room

I just built almost the exact same computer about 2 months ago. Love it! Super fast, quiet - and cool. My old set up put out some heat! The liquid cooling obviously makes a huge difference
I'm not much of a gamer anymore, ever actually, so not really sure why I built this beast, but my old one was getting up there in computer years.

Liquid cooling usually disperses more heat making the ambient room temperature hotter

I've never done liquid cooling before, always managed to make it work with case fans. And I swear my PC does not sound like a jet engine.
I think I would probably end up upgrading my monitor. It's not bad, exactly, but always utilizing cast offs from places I've worked instead of investing in a nice one.
