My pops always claimed the chinquapin to be the best eating of the breams. I can't tell much of a difference myself.

Goggle eye can get mushy. I no longer keep, but would if I needed fish that day and I was not going to ice them.

Personally I'd love to see people do a blind taste test and see if they can tell any difference at all. Take a fillet of 5-6 species of bream, sacaulait and bass and cut them into equal sized pieces. Have someone eat a couple pieces of each species and see what they think.

My money is on no one would do any better than a random guess. Maybe I'm taste blind though.

You would be correct. We've done a test like that.

Catfish could be picked out pretty easily though.

I could probably pick the bass out of the bunch unless they were too small to keep. I really doubt anyone could distinguish between any kind of bream and white perch.

All sunfish taste similar but IMO, crappie, and bass are easily distinquishable from the rest.

This, other than the fact that they are bream and not "sunfish"

My family has never been a fan of goggle eye. I was taught at a young age to throw them back. And I still do it as an adult.

I think blue gills taste the best. There meat is whiter than white. Then crappies and basss, with chinks right there with em. Catfish last. Only thing about bream is the bones but cooked right you can peel the meat right of the back bones.

I can tell the difference but they are all good.

Shell crackers are some of the best imo, spotted bass are great tasting as well.

I like crappie and bream the best and I only keep bream big enough to fillet. I love a piece of bream fillet.
