Coworker brought in a convection oven from her own wallet the next week

I gave my office a toaster oven for similar reasons. Dunno why an office that will pay for coffee, bottled/filtered water, etc would not pony up $25-40 for a toaster or small counter oven. It's the little things that boost morale, y'know?

That looks awesome. I'm gonna do that at home. Too tough to transport

Figured that. But I want to make me some at home too. Even if I eat them all by myself

If you decide on something else, consider the shrimp and andouille mini muffin cakes in the recipe book. If you can't get andouille, sub smoked sausage.

I think Otis or maybe Rat put a recipe in the book for Cousin's Creole tomato dressing or make a remoulade sauce. Make ahead, bake ahead, good at room temp and easy to transport.
