Again, this should be obvious to anyone who can get over the gimmicky aspect of it and realize it's a failure in both idea and execution. No doubt morons will still line up around the block for it I'm sure.

I don't think making something great means making it where you'll get bites with only 1 item. The whole reason sushi is bite-sized is so you get the flavor of everything in each bite. With this, you're gonna get a bite of straight avocado.. a bite of just rice.. etc.

Also, seaweed is way too tough to take a bite out of it like that. You ever try to take a bite of a larger roll? The seaweed totally fricks it up.

I made some Sushi Jambalaya with leftover sushi ingredients one time. Sushi rice with bits of fish, avocado, cream cheese cubes and strips of nori. Top with light soy sauce with wasabi blended in.

My guess on the "sustainability" bit is that it's the more acceptable way of selling "you'll consume less fish but still feel full."

I'd be willing to give it a go, but I would have very low expectations.
