I had a lot of good food over the holidays, but the single best thing I ate was a simple dish. It was the mustard greens I prepared for New Years Day. These were fresh harvested, young, tender, crisp, brightly colored, clean greens. The prettiest greens I've ever seen. They were simply prepared with a little bacon grease, onions, lightly pecan smoked meaty ham hocks from a farm. Used a little local honey as well. One bite was heaven on earth and cast iron cornbread with that bacon grease crispy bottom was just the thing to dip into the pot liquor. Mouthwateringly dynamite greens.

Not exciting to some folks, I know, but my palate was doing a happy dance.

Didn't really do a lot of interesting holiday eating, so I'm going to go with the PB&J at Saltine in Jackson this past weekend.

Pork belly with pepper jelly and boiled peanuts.

I made mustard/collard mix on NYE for my guests, but I drank too much champagne and never actually tried them. They cooked for a looooooong time in bacon and stuff though, so I'm sure they were good.

A fried turkey and a brown sugar spiral sliced ham. Both were phenomenal and better than they are usually done by my family in years past. had lots of other good food, but I could have gorged myself on these two.

tasting menu at Capitol Grille at the Hermitage in Nashville. Pretty decadent. Wish I remembered everything I had but scallops and beef cheek were among the highlights.

One of the Christmas parties I got drug to the hostess made a crawfish ettoufee she served over some bombass cheese grits. That's the best thing that sticks out.

Of what I cooked:
Smoked Woodduck, andouille and oyster gumbo. Runner ups were some pepper glazed baby backs and char grilled oysters, Otis recipe.

Yours sounds really good. My best dish was the cocho de lait benedict at Dark Roux in Lafayette. That was a great dish.

It was in the form of a liquid. A 1995 Silver Oak Napa Valley. We were supposed to open it for Thanksgiving night, but we came home late.

I was scared the cork would crumble, but it came out with only a large crack in it. We left the bottle open for 30 mins. Every 10 mins I would smell it in anticipation and it kept changing. We decanted it and we didn't touch it for an hour.

It was divine. I had never drank a wine this old and now I want more.

Father-in-law's rib roast was legit and I made a green bean casserole using Donald Link's recipe that was really, really good.

Restaurant Iris in Memphis for our wedding anniversary! The bone marrow app and the Lobster roll app were the standouts.

I did it for Thanksgiving, and it was the best green bean casserole I've ever had. Will definitely do again.

That's what I got the first time I went! Such an interesting combination, like a flavor explosion.
