Looking for a good recipe for chicken fricassee or chicken & gravy to serve over rice.

I found this one, but it seems like it's almost chicken & sausage gumbo

Any other recipes?

get you a good fat chicken for a friccasee.... fry the shite out of it in a black pot then go from there.
the best ones will make a paper towel/napkin stick to your fingers.
my great grandmother made the best.

Thanks- I'll probably use that one with just breasts/thighs.

I have never seen mushrooms in a fricasse but I notice Foley uses mushrooms in lots of traditional cajun dishes. Never seen sour cream used either.

Skin and bones are what makes it. Don't cheat.

I'll be sure to use bone in/skin on.

"In Louisiana it is traditional to finish a fricassée with sour cream."

No. Just no. Dammit, Folse!

EDIT: I see I'm not the only one getting REAL tired of John Folse's shite.

Has anyone else heard of mushrooms in a fricasse? He seems to like to add mushrooms to lots of traditional cajun recipes.

Never had mushrooms in mine, or finished it with sour cream. Having said that, I'd probably enjoy both.

I know it's not traditional, but sometimes I will add tablespoon of sour cream to finish off a chicken stew. Adds some extra depth and smoothness to the gravy. Don't knock till you try it.
