Do you cover your gumbo with lid while cooking?

Only if I have too much liquid for whatever reason to let it cook down

No. I let the stock get more concentrated by cooking off some water.

agree- lid on will keep moisture in- which i would prefer since i like more stock, but it just depends on how you like yours

you can always add water to thin the stock or make more.

I don't unless it's too thick. I prefer my entire house smelling like gumbo.

For me it just depends. If I have limited space in a pot, I will use more roux and keep the lid on so it doesn't evaporate. If I need to reduce it towards the end any, I will take the lid off.

If I'm making a smaller pot, I will leave it off sometimes and put more stock in to allow for the reduction.

Uncovered for most of cooking process. Then lid goes on at the end for a simmer.
