Any healthy crock pot recipe books you would suggest?

We eat pretty healthy, and I've found the new crock pot to be so easy for cooking throughout the day. I'm looking for any suggestions for a healthy recipe book. Thanks!

Not exactly health-oriented, but for Christmas, I got "In a While, Crocodile - New Orleans Slow Cooker Recipes".
Here's a sample:
Irish Channel Corned Beef and Cabbage
3 pounds corned beef
1 onion, chopped
4 carrots, chopped
1 head cabbage, broken apart
1 1/2 cups water
1 (14-ounce) can chicken broth
Rinse the corned beef and cut off excess fat. Place the onion on the bottom of the slow cooker. Place the corned beef on top of the onion.
Add water, chicken broth, carrots and cabbage. Cook on low heat for 8 to 10 hours, or until meat is cooked and vegetables are tender.
Makes 6 to 8 servings

Also not strictly healthy, but The Italian Slow Cooker is an excellent crockpot cookbook.

Here's one I make:
Cube an eye of round roast. Throw it in the crock pot with chopped onion as well as chopped red, orange, yellow, and green bell peppers. Add 2 beef bouillon cubes. Pour a large can of petite diced tomatoes on top. Cook on low all day. When you get home from work, season to taste and thicken with a little corn starch dissolved in water. Serve over brown rice.
