Tagine? Moroccan Cooking?

My wife got me a tagine for Xmas. It appears to be a ceramic Dutch oven from Morocco. Anyone else have one? Any recipes or insights?

I did a chicken dish I picked up on the net last year. Was great but I didn't save it. Used preserved lemons, of which I had made many.

Good little cooking vessel, but can't sear with it. I like to braise chicken thighs with rosemary, onions, white wine, lemon (either fresh or preserved), paprika, olives, and oregano. Or some combination thereof. Serve it over couscous. Since the liquid does not evaporate, use less than normal.
