Best knife sharpener?

Bought some POS from amazon a couple years ago, knives seem even less sharp after using it.

Guy from Mississippi come to the FQ about every two weeks and does a ton of restaurants in the area. Also does a Sat once a month at Mary's Ace Hardware on Rampart, across from Armstrong Park. Charges about $5 per knife. Look them up and sign up for email updates and you'll be notified when he's in the store.

I use a Spyderco Sharpmaker
LINK it seems to work much better with some knives than others. I've heard good things about the Work Sharp tools..

What brand of Japanese water stones does the board prefer. I just got a moritaka gyuto. It's a carbon steel blade and want to get some stones. I was looking at getting some nortons in a 1000 4000 and 8000

I sharpen my kitchen knives about once a year with a Lansky set that I picked up at a garage sale.

The rest of the year, I hit the knife -- every time I use it -- a few times with a $10 Accusharp and then a few strokes on a ceramic honing rod to polish it up.

That keeps them very sharp for little $ or time.

Switched to this (Furi diamond fingers) several years ago and haven't looked back:

It keeps a perfect angle. 20 to 30 passes and you can shave.

I use a chefs choice 130. Sure, you can get knives sharper with stones...and a ton of time...if you know what you're doing. I can sharpen a knife and hit it with a steel in less than a minute, and it's mighty damn sharp.

I have a chef's choice as well, but I'm about to go to stone's. My Chefs choice will only sharpen to a 20 degree angle. They make one that will do either 20 or 15 degrees. My Japanese knives will hold a 12-15 degree angle.

first learn to sharpen a knife - Its all about the angles.

Second - Diamond stones are great

or get you one of these by Lansky.
Pain in the arse to operate but it will get your knife sharp as all hell with the right angle every time.
