Meat thermometer in over

If I'm monitoring the temp of meat in the oven, can I keep a single prob metal thermometer in the oven so I don't have continuously check it?

Yep. The glass plate will likely blacken out, but it'll work

A maverick thermometer is what you're looking for. Great for both BBQ and ovens.

I've gotten false high temp readings like that before. With a metal thermometer. What in the world did I do wrong? I just figured I wasn't supposed to leave it in.

You might get a gauge with a wired probe you insert, close the door and displays temp. I have used the same one for years. Coating on the wire won't burn.

Perhaps there was a bone involved and the probe was too close to it.
