I think saying I'm mediocre would be giving myself too much credit. I do have things I make well. Mostly things that are made outside, involve open flames, and beer.

My wife will admit she is mediocre.......She can do some cooking things well.......but upon her instance, I am the cook and she cleans.

Good insights folks.

I realize that I need to cook simple things well.

Like many things, as soon as it hits you, it is obvious.

I can't cook much of anything without a recipe but I'm pretty damn good at that. That just makes me good at following directions and not a good cook.

I don't have good technique, but there are some things I do very well. I guess it averages out to mediocre.

Mediocre is what I shoot for.. I know my limits and as long as I work within those limits, go by the recipe, and don't try to make it "my own", I can generally put something half-way decent on the table. Deviation means disaster.

On a scale of 1 to 10 with '1' being "cannot boil an egg" and 10 being "a chef" I'm a 7. Wife is a 1. She tried boiling an egg once. It was a disaster.

I can grill and cook breakfast and a fix a good gumbo. Other than that you don't want me cooking.

I could use some better skills for this. I guess I'm just too worried about the meat burning.

I'm ok - I purchased a bge about 3 years ago and I must confess that I really enjoy smoking a turkey over thanksgiving and Christmas holiday and have always gotten great comments - but other than that I'm average at best.

I'd say if mediocre is a 5.0, I'm a 5.3, and improving. Like, I'd like to try to work culinary school into my schedule and move exclusively in that direction if I can.

I love food and love cooking. I'm really fascinated by just about all of it, and I think I could be really good, but not based on talent. Just that I love it enough to work hard at it and improve.

That shite is better than any drug when you are sick. I still eat my Campbell's Tomato Soup out of the same bowl I did as a child 40 years ago.

------------------------

On topic, there are some things I cook that I knock out of the park. Everyone loves, craves, and looks forward to eating if they know I'm cooking it. As far as going into a kitchen or pantry and just coming up with something based on the ingredients, and then cooking it without a recipe, that's where I fall short. So, I guess by definition, that makes me mediocre, or just a tick above.
