What's the longest you've waited to start a job after accepting the position?

I had an interview with a prospective employer on Wednesday the 5th and I was offered the job on Friday the 7th.
I told them during the interview that I could start immediately, and the position was list as available until filled.
The supervisor I spoke with asked me to send along some paperwork so that Human Resources could begin processing everything. He told me on Monday the 10th that he hoped they would finish everything by the end of the week.
I contacted him again last week and asked if he had heard anything from HR. He said he had not. He also has given me no tentative start date to this point and I am currently working part-time at a job I held during college.
To top it all off, the business will be closed for two weeks during Christmas; because I am not yet eligible for any paid holidays I will simply not get paid for that stretch of time.
Has anyone else ever had an issue such as this?

Dude, relax.
Businesses have their own needs, due diligence, etc.
They're not going to rush you through just to suit your financial needs.
And if you bug the shite out of them now, they may get the idea that you will not be able to comprehend such.
Stay in touch, and relax. If you're bored, continue your job search... you may find something better.
Congrats on the new job.

It sucks having to remind myself that. While I was in college it didn't matter because I was consumed with other responsibilities, but right now it feels like an eternity. Plus, I would like to be able to buy some worthwhile gifts for my loved ones this Christmas.

Thanks man, I appreciate that.

After re-reading your post, I'd stay at full-throttle on my job search.

Add in that most HRs are slow as shite and this time a year they're scheduling Thanksgiving parties/lunches, Christmas parties/lunches and don't give a shite in general.

Got offered a job once on a project team that was hiring 19 people for the position that I was offered. I was called back 2 days later and told that they had actually already filled the 19 positions before I was even interviewed, but that they'd work to find some room to add me to the project anyway. About a week later(maybe two weeks, I don't remember exactly) I was contacted again and offered the same position. I started working probably a month later. It was really frustrating, but has worked out in the end and I've been working for the same project for about 3.5 years now. Best career decision that I've made, because I really felt like telling them to frick off after the screwed me around the first go 'round.

No, usually between the offer and acceptance all the details including start date or worked out. Granted, HR does the drug test, paperwork stuff afterwards but that's all accomplished in maybe 2-3 days.
Every company I've worked for wanted me to start immediately, but due to needing to give two week notice, relocate, etc. it was usually around a month between acceptance and starting. I've never heard of a company hiring someone then not wanting to nail down a start date. I'd continue your search.

10 months. Offered in November 2007. Didn't graduate until May of 2008 and negotiated a September 2008 start so I could have the summer to enjoy.

That's what I figured. Every part-time position I have ever applied for or accepted has required me to return within a week or so to either begin training, to take a piss test, or complete my tax forms.
By the way, this is a state position. I don't know if that makes that much of a difference. I am aware of the snail's pace that government bureaucracy operates at.

The position isn't even one I particularly want. It's not in my preferred career field and doesn't pay enough for me to completely dismiss anything else.

I interviewed in February.
Just got my offer last week.

5 months, was with the government, slowest people to walk the face of the Earth

Since it's a state position I'm sure you're fine. The HR people are probably busy with holiday stuff and made you a low priority. Also, the joke about government employees being insanely inefficient is true.
After a short experience I learned that I can never work for the government. Hopefully your experience will be different, congrats on the job.

Interviewed Oct 3, accepted offer Oct 25, start date Jan 5th. It's a big company and the HR lady I'm dealing with is a new employee. They can't find my medical clearance so I've been on the phone having my records resent. Yes slow and frustrating as hell but until I walk through the door I'm still applying/interviewing with other companies.

Oh. If that's the case, you need to put your arse in first gear and plan to live like that from 8-5 from now on, and expect the same from everyone else.
