Need broccoli recipes

I binged it but I came here to the experts. For health reasons, I have been advised to eat much more cruciferous veggies. I have eaten broccoli whenever it was available, and am OK with it, not really wild about it though. But recently I had some oven roasted broccoli at a restaurant and it was really good! I tried it at home with olive oil, sea salt and garlic salt. I will get better with this in time. Please give me some simple recipes for broccoli and other cruciferous vegetables, no cheese, please.

I like to put a couple of tablespoons of olive oil in a large pan on med high heat, add a clove or two of chopped garlic and stir for about 45 seconds to flavor the oil with the garlic. Add a pinch of red pepper flakes, then throw in a bundle of clean, chopped broccoli.
Tumble the broccoli in the oil for two to three minutes, reducing the heat so you don't burn the garlic.
Add about a half cup of water, reduce the fire to low and cover. Allow to steam for about 10 minutes, turning a couple times, til the broccoli is bright green and still has a bit of crunch.

You can use this saute method for just about any green veggie: kale, broccoli, broccoli rabe, asparagus, bok choy, etc.

So the joke around here is to say "microwave" when people ask how to cook something. But I have to tell you a great way to enjoy fresh broccoli is to put it in the microwave in a ziploc bag (don't close it all the way) and zap it for 3 minutes. Take it out, let it rest for a minute, squirt some lemon juice on it and season with Tony's and it is good (butter wouldn't hurt the taste, but sometimes just the lemon juice and Tony's will do it). The broccoli is still bright green and it's done, but not overdone.

Have you ever had broccoli salad? Raw broccoli (or blanched), golden raisins, diced red onions, bacon pieces, sunflower kernels (or chopped pecans or pine nuts). People use different dressings, but mayo, sugar and a little white vinegar is a good choice. (I've only ever eaten broccoli salad, haven't made it myself.)

I just put it on a baking sheet and drizzle with olive oil, salt and pepper and roast it.

If anyone has some different recipes I'm interested as well.

I agree that roasting broccoli is the best way. The only thing I do differently than the way you describe is I squirt a little lemon juice after pulling the broccoli from the oven and sprinkle a little parmesan reggiano on top but I know you said no cheese.

turn your grill on high and cut those trees into 4ths. mix some olive oil, salt and pepper, minced garlic, and lemon juice together and toss the trees in that. throw on the grill for about 2 minutes a side to heat it up and mark em.

Lately I've been doing the roasting w/ salt, pepper, olive oil, and minced garlic. Toss some parmesan on at the very end.

90% I eat it raw. The times I dont I either cook it in the microwave a glass dish with a cover or I blanch it.

For the microwave I cut it into small pieces, sprinkle with a little salt and pepper, a few pats of unsalted butter and a maybe 1/4 cup of water. Micrwave on high for 4-5 minutes.

To blanch it, I get a pot of water boiling with salt and liquid crab boil. Boil it for 3 minutes take it out and dump it into an ice water bath.

I don't even use a strainer. I fill a pan to a depth about halfway up my index fingernail. Bring it to boil, add broccoli. Add some kosher salt and a little black pepper. Steam until fork tender.

Easy, simple, and i love it.

Roasting is my favorite way to have it and you can saute some onions and garlic in a little olive oil, add the roasted broccoli, add some chicken stock,season to your taste, puree it with a hand immersion blender or in a blender and you have a delicious soup. If you want a cream soup, just add a little cream, 1/2 and 1/2 or milk of your choice. There's nothing exact about making it.

You can do the same with cauliflower, though I make that one a little herby with thyme and/or rosemary or I just include some curry for another flavor.

You can make either with steamed veggies, as well. As Darla said, the microwave is way easy to steam veggies like those. I do it frequently. If you want to boil in a little crab boil, you can put them in a microwave safe bowl, add water and the boil and bring it to a simmer in the wave. It's so easy.

Also, there are quite a few good recipes for brussel sprouts in the recipe thread above and probably in the recipe book stickied in the first post in that thread, so take a look. They're great shredded in a salad and roasted/caramelized brings on a whole new flavor.

Also try roasting radishes. They turn sweet. Delicious.

I had a thread in the past few days on making a curried turnip soup. Should be on page 2 or 3 of this board. Take a look at that thread.

Lots of things you can do with those types of veggies.
