simmer vs low

hey guys have a new house and cooking a chili for the first time on the stove.
I have a 4 burner gas stovetop and 3 of the 4 burners have a LOW setting but one has a SIMMER setting
I always thought they were one and the same.
ive had it sitting on low for a while and its bubbling around the edges and the flame looks bigger than on simmer.
which would be better for a slow 3 hour cook on the range top?

Simmer is when you cook a liquid with no bubbles.

Sounds to me like you are just above a simmer. Put it on simmer and it should gently bubble occasionally.

Do NOT let it simmer on simmer. They're just fricking with you.

Simmer.
For a fast 3 hour cook, use low.

Forget what the dials tell you.
Simmer is slight bubbling. Low is no bubbling.
For a 3 hour cook, go with a low simmer.
