I'm ashamed to say that I've personally never boiled crabs Gonna try to do a few dozen this weekend at the camp and am looking for some suggestions. Hopefully I can find what I need. TIA

Ice them down before boiling to keep the claws on

Put cold crabs into boiling water or all the legs will fall off. Boil for 5 minutes soak for 10. If they are really packed with meat you will need to soak them longer. Sometimes I poke a hole in the shell to let more juice in and they really take the seasoning.

Just like crawfish. Boil till they float. Soak until they sink.

More seasoning than crawfish or what? I'm gonna throw some sweet potatoes in there as well

Eta: also, where do you suggest I go get some? I'm gonna put out our 5 traps but if they aren't big I'm gonna buy some.

Yes or you'll have to soak them much longer.

I don't like crabs seasoned as heavily or in quite the same way as crawfish. To me, crabmeat is sweeter/more tasty on its own, whereas crawfish boiled plain taste rather muddy. So try boiling crabs some time with nothing more than salt & a little onion & lemon. Delicious, I tell you.

Two ways have worked for me to keep the legs on:
1. Ice them down heavily before dropping into boiling water
2. Boil up all your stuff, then kill the fire and let the water cool off. Once it's down to just warm, drop the crabs in and then re-light.

2 works well if you're boiling shrimp too. Do the shrimp first, when they're done soaking, the water should be just right for the crabs.

I also think method 2 makes for better seasoned crabs, because they're breathing/drinking the seasoned water.

I usually put more seasoning than crawfish. If you don't catch, try Popeye's (985) 227-1959 on Grand Calliou road--you can probably get there by boat fastest from where you are. He's a cool guy. or Call Tounces for info on Mr. Luke (I think that was his name). D'Luke seafood.

You'd have to put a boat load of extra seasoning to make it taste heavily seasoned or in the same way as crawfish. If I have a planned boil, I'll do the seasoning. If I come home after a fishing trip with some fresh crabs, salt and lemon works just as fine for me as well. The extra season doesn't necessarily heavily season the crabs. It helps season them period or can help decrease the soaking time if you like a seasoned crab. I could use a whole bag of crab boil and barely taste it sometimes depending on how full the crab is.

let the cajuns handles this

bring water to boil
season water with:
your favorite powder (not pro boil) - qty to your liking
1 bottle zatarains liquid (i like lemon infused)
1 bag zatarains crab boil (you buy it in a yellow/blue box)
1 sack onions, cut in half
1 sack lemons, cut in half and squeezed
6 cloves of garlic, tops cut off

add cold crabs to rolling boil
bring back to a boil
boil for 8 minutes
add 1 box salt
2 more minutes
shut fire off
soak until they taste good
add ice if desired....will help slow the cooking process and allow you to soak longer.

drink.

Fill pot and add spice. Put crabs in and wait for air bubbles to calm down.

Turn on flame. Pull crabs when boiling starts.

I'll be I'm Dulac (God's country). There's a place in walking distance from my camp but the crabs weren't very good last time.
