Skirt Steak = King of Cuts

I have always loved skirt steaks, but common beliefs have always formed my opinion that it is an inferior cut. I am now willing to admit that it is the best cut of beef on the planet. I have been grilling steak for about 12 years now and have always ranked ribeye and filet, respectively, above the skirt. I am now prepared to admit that a properly cooked and cut skirt, tops my list. Am I alone on this?

A flat iron steak is delicious. My favorite to grill and slice thin, perpendicular to the grain. Not sure if it's a skirt steak, but I think it is.

Hanger is substantially better than skirt, and that's just from that style of cut.

Love me some skirt steak. Is it better than all other cuts? That's a matter of opinion. There are times when I get a hankering for skirt steak, though, and nothing else is better.

I used to say it was the best back when it was $4.99 a pound.

I blame Alton Brown. He introduced Food Network to it, and now it's $8.99 a pound at my Publix.

Food network is the blame for a lot jacked up prices. But in this case is also blame Mexican restaurants popping up everywhere and people wanting to cook fajitas at home. Hanger, skirt, and my personal favorite flank - they were all considered cheap cuts 15 years ago. Only butchers took them home because they knew what was good.

I prefer flank over skirt, but will buy either if they're on sale and will treat them both the same.

It can be pretty damned tasty if done correctly.

We tried this last summer (was pretty damned drunk so need to try again sober) and it turned out much better than I imagined. I was enamored by the method the first time I heard of it and was always wanting to try it. Actually I'm glad you posted this because it reminded me to try again. Jack Daniel's will have to sit this one out though for good results.

Never cooked it directly over coals, but my method is similar with a high heat sear.

I cook it a lot of ways, but this is still my favorite. The "dirty" corn mixed with the juices from the steak is so good.
