A good shrimp spaghetti is a fine thing, esp if you sneak a little bit of crab fat into the gravy when no one's looking. (It weirds some ppl out, but it adds an incredible flavor/background richness.)

My mama used to make killer pie crust, and her chocolate meringue pies are fantastic. She quit making them years ago due to arthritic hands.

We quit making it. There is a lady in Pierre Part that makes it and it is the best I've had. We buy it frozen from her. Can't find the name right now.

I buy it frozen from Downtown Don's in Laffy and Pat's in Hendersonwhen I'm in the area. I have a quart of frozen from Bon Ton someone brought me a few weeks ago.

Really 4 things stand out for me when it comes to moms cooking: chicken stew with sweet peas, round steak and gravy, chocolate oatmeal PB fudge and oatmeal pecan raisin cookies (she swears by sugar from the sugar house only).

Chicken Milanese with Arugula Salad.. I have to give credit to Del Porto in Covington though, ate it once a week for lunch over the summer and decided I could make it, it's a pretty close second to theirs



Pound out the chicken breasts as thin as possible, and set aside

Make an egg wash (I eye out about two cups of milk, two eggs, add chili flakes and pepper)

Take a baking sheet and grease it (I use bacon grease)

Preheat ove to 400

In a pyrex baking dish add a few cups of italian bread crumbs, dredge the chicken breast in the egg wash and then coat with the bread crumbs and place on the greased baking sheet

Put in the over for about 20 mins, I like them crispy so I leave them in a bit longer, I usually flip them once about halfway through

Once they are done, pull them out and place on a plate. Build arugula salad on top of chicken, squeeze lemon, olive oil, Parmesan cheese, salt and pepper on top. I put sriracha around the side of the plate, but I am addicted to sriracha haha

It's like we are the same person. Chicken stew is smothered chicken at my house. Crab stew. Shrimp spaghetti and round steak and gravy. So far. Today.

I wanted to post the exact same thing. Mom used the hell out of that pressure cooker, and the beef (often a chuck roast) came out very tender and very moist. Didn't serve over rice though.

She has way too many to pick as best but I do have my list of favorites.

Roasted leg of lamb
Roasted pork butt with gravy. Sliced not pulled. It's much different.

Scones

Ribeye steaks in a hot cast iron dry skillet with salt in her kitchen and you smell it for a week.

Her coleslaw and potato salad

A simple baked chicken

Short ribs that she has made since the mid 50's when they were damn near free. Pisses her off at the price of short ribs

Her fried chicken that she did in the kitchen as well. She always fried seven total chickens because we had a big family and all loved cold chicken. She also said if you were going to make the mess you might as well do a bunch. I always got the wishbone because she country cut her chickens to have this piece. At least she called it country cut since she was a farm gal.

Her fresh snap beans that are cooked down with fatback for hours southern style.

Cornbread

Lemon meringue pie

Homemade banana ice cream

Beef stroganoff every year for my birthday even now.

It was only in the past several years that I've had fresh picked green beans and freshly dug new potatoes. My goodness, the difference is amazing.
