Not sure if all of these are still open but, here are a few in MS/LA.
Catahoula Recreational - Sicily Island, LA
Red Creek Offroad - Perkinston, MS
Tower Trax - Fluker, LA
Highlifter Offroad Park - Shreveport, LA

Tower Trax in Fluker is great. They seem to put a good amount of money back into the park maintaining the trails, building new facilities, etc...
Red Creek used to be an awesome place to go. We quit going a few years ago because the management kept getting worse and worse.
Catahoula Recreational used to be a little piece of Heaven on Earth (for atv riding). I think they are primarily focused on Jeeps now but ATV's are still allowed.
There is a new park near Red Creek in Mississippi called Muddy Joes, which is supposed to be really nice.

Sabine ATV Park is just across S. Toledo Bend in Texas, bunch of buddies go there and love it.
Heard good things about Highlifter park in Shreveport too.

The spillway used to be a good place to go. I haven't been in a while so I don't know what it is like now.

Muddy Bottoms in Sarepta. You won't find anywhere else that compares to it.
