Mix these together:

2 lb. butter, softened
•1/2 cup finely chopped fresh garlic
•1 Tbs. black pepper
•1 tsp. dried Italian seasoning
•6 dozen oysters on the half shell
•1 cup grated Parmesan and Romano cheeses, mixed
•3 Tbs. chopped parsley

Grill your fish on one side for @ 4 minutes on med - high heat. Flip it and pour mixture on fish, cover grill and let cook another 4-5 min.

Eat.

Need to read more carefully

OK Season with salt and pepper. flour lightly. sauté in butter and oil. Using a spoon, ladle hot oil/butter over fillet as it cooks.

Plate with some steamed or roasted asparagus and a light beurre blanc sauce with a touch of lemon added.

I don't have two pounds of butter or six dozen oysters. The rest sounds great though.

Mahi makes great fish tacos. I like to do fresh guac and mango salsa on em.
