Gas vs Electric Smoker

We all know the difference in taste between a gas grill and charcoal, but since the heating method in a smoker is simply to obtain smoke, what difference if any is there between gas and electric? Any pros or cons?

I know that some electric smokers have the capability of shutting themselves off one the target temperature is reached, so that's a plus.

Gas is more portable

Electric you don't have to worry about having propane tanks

There is no difference taste wise, flavor comes from the wood. I have a Masterbuilt electric smoker . I don't use the built-in chip loader and tray but other than that, its great and I use it almost weekly. I smoked some beef ribs in it this past weekend.

gas is a 'wet' heat so no need for a water pan during the smoke and it gets to correct temp right away.

electric you can 'set and forget' the temp but it takes longer if you open the smoker to get back to temp.

of course nothing beats an offset smoker using wood and a long night of chilling on the back deck with a case of beer

Never had a gas smoker, but I really like the ease of plugging in my smoker, getting the meat ready, and smoking for xx amount of time and it's done. No worries of running out of propane or changing out fittings and hoses.

I have the Masterbuilt XL gas smoker. Works very well. I went with the gas over the electric for portability mainly and capacity second.

It needed jsut a few mods to make it work extremely well.
1) I added a gasket to the door since it was leaking a good bit of smoke rather than getting proper flow out the top vent.
2) the water pan is too small. I added a larger pan and it not only keeps water for an entire smoke, it covers enough area to catch most drippings.
3) the wood pan is a bad design. The slits in it cause the wood chips to catch fire rather than smolder. I added a cast iron pan on top of the factory pan. Lets the wood smolder without catching fire

I've got a Lang reverse offset, a Primo kamado and a Bradley electric smoker at the house. I had the WSM for many years before dumping it some time back.

The Bradley electric is a great unit for small jobs like 2 butts or a handful of chickens. The thermostat and smoke are independent so you can cut off the smoke and maintain the oven temperature. It leaves a great smokey flavor; however, you have to buy the wooden pucks from Bradley. They arent expensive but also arent available at your local Wal-Mart typically. This is the con in my opinion.

A neighbor of mine recently picked up a Traeger and it does a a good job too and doubles as a grill.
