I have 8 pounds of ground ribeye, what to do with it?

Should I make sausage or stuff with jalapeño and cream cheese?

This would be an appetizer for a gumbo main course

Any other recs?

I'd make hamburger patties and smoke them. Ground sirloin from my smoker is the tits.
