I have some 75 year old very valuable shotguns (Parker, etc.) that I would like to get back in working order and perhaps bore from 2 1/2 to 2 3/4. Who is the very best in terms of working on old guns like these?

I wouldn't trust any of the 'smiths in BR to handle a Parker.

1) I would not open the chambers. If you want to shoot them get some RST shells if they are in working order.
2) If you need other work done, check out Double Gun Shop for the correct smith for the correct job...

Trust me, if they don't specialize in double guns, you don't want them touching it. If people from around the country aren't sending guns to them for work, you don't want them touching them.
Someone that doesn't know what they are doing can cut thousands off the appraised value of these gun...

If you want quality work on a double gun you will really have to broaden your search beyond Baton Rouge. 2 of the best Parker guys in the country are Larry Delgrego and Brian Dudley. Larry did a great job restoring my dad's 16 gauge but this was over 15 years ago and he has started getting mixed reviews on his current work. My dad (who is obviously a big Parker fan) recently commissioned Brian to locate a 12gauge and totally restore it. The people who have the skill and experience to do a restoration on these guns that will actually add value are few and far between. Not only will you pay a premium for quality work but you can expect the project to take at least 6 months to well over a year depending on the scope of work desired.

This. I have used this guy numerous times. Great guy. He will spend time with you and tell you what needs to be done and why. He will also tell you if it's a job he can't handle. At least talk to him.

He's top notch - he makes and installs coustom muzzle breaks; makes stocks from raw blanks of wood; and he was an Olympic marksman for Brazil in the 60's - so, he has been around guns his whole life. If he isn't comfortable touching the gun, he simply won't do the work.
I'm no expert. But, if the gun's value is paramount, then I wouldn't do a thing to it - keep it in its current condition and it'll be more valuable to a collector.

I also use Chahin as well... Nothing but good experiences with him and always does a quality job.
