favorite chicken breast recipe/meal?

Mine's pretty boring but I marinade the breasts for a few hours. Spray dish with Pam, put breasts in and cover them with sliced onions, a little butter and basil. Cover the dish with foil and cook for 20 minutes on 375. Remove foil and cook for another 10 minutes. Should come out nice and tender

Cut them into tenders, lightly dredge, and coat in bread crumbs. Fry em up in a cast iron skillet and serve with K Paul's creole mustard sauce. Serve with your choice of sides.

My healthy recommendation would be seasoning with lemon pepper and a little Cajun seasoning of your choice then BBQing or baking them.

Get some kalamata olives, garlic and cannelini beans (canned variety), fresh thyme and rosemary. Mash all together to form a paste. Slit the chicken breasts to form a pocket, and stuff with the bean/olive mash. Season the breasts and pour a little olive oil on top. You can either place on the grill, or roast in a 375 oven for about 1 hr.

Brine them for 24 hrs in your favorite brining solution......pat them dry.....rub well with a dry jerk or bbq rub.......

Smoke at 225 for about 90 minutes with cherry and apple wood chips....

agreed. don't know how many breasts he's got, but I'd be happier trading them for half as many thighs, if I could.

The only time I'm cooking a chicken breast is when it's attached to the chicken.

at the moment, canes chicken strips, zaxbys seem too salty.

Ok I'll contribute. Fajita seasoning, cook high, hot and fast. Do not over cook. Let rest a couple minute and chicken sandwiches.

I wouldn't brine a chicken breast for more than 3-4 hours. A whole chicken 12 or so hours and a turkey 24 hours. Be sure if you brine to was very well with cool water and pat it very dry.

Okay. Here's my contribution. Brine a whole chicken. Or don't. Pat dry. Salt heavily. Set on top of Brussels sprouts, cut up potatos, turnips or whatever vegetables you have. Put in a 450 degree oven until it's cooked. Enjoy your chicken breast.
