The way the plate bounces looks sort of fake but who knows. Some people on Reddit think it's done with video editing.

The bouncing doesn't really make me think it's fake, it's more of the way they filmed it by cutting away from McCoy before you see him actually throw it that makes me think it's fake

Looks like it is probably made of foam to me. The way he releases it makes it seem like he was trying to get it to fly.

Another thing that makes me think it is foam is the appearance. The corners of that plate is way too square, and the paint is too flat.
