Fried Chicken Pizza

I get this request from my teenager often. It's pretty simple.
We get Publix fried chicken one night for dinner (anyone's will do). I intentionally get a little more than we will eat for the leftovers.
Debone and decrust the chicken. You want a pile of chicken meat and a pile of the cracklings from the batter on the outside. I discard the bones and skin.
Roll out pizza dough of your choice to the thickness you want (thin, thick, large crust). Instead of a pizza sauce, use a fine layer of mashed potatoes (homemade are best obviously). Then layer on your chicken, then cheese (your choice), and then finally the cracklings on top of the cheese (you want it to be crunchy).
I do mine on my BGE and they are awesome.

I'd try it but it doesn't sound appealing. What initially made you think of making a fried chicken and mashed potatoes pizza?

Left overs. I make sure to repurpose just about everything we cook. Making pizzas with different left overs is fun and a way to extend food.

In the pictures is looks like it is cold already. There is not very much missing. You sure it is worth all the trouble even before firing up the BGE?

I agree with the guy that said a layer of brown gravy might be nice with it. I wouldn't expect too many positive posts from this board, but that looks good to me and IWEI.

Couple of things. Not sure about the potatoes but I'd put a pesto on it.
I make and have for many years a fried chicken gumbo.
Publix fried chicken is great.

Debone the chicken and add it and as much of the batter as I can get. I throw a little bit of skin in for flavor.

I think this sounds awesome and would order it if I saw it at a restaurant. But I would never make it
