21-25's or 26-30's, butterflied. Not sure where to get them in Metairie or Destrehan.

All head on counts---10/15 (jumbo), 16/20 (for large), 21/25, or 26/30 for (medium to large).
In Metairie/Destrehan, try Fisherman's cove in Kenner.

26/30's normally. If it's for a po-boy, I prefer smaller shrimp. 51/60 count works well.

In Destrehan, cross the river and go to Boutte...try Zeringue's or Hebert's. Also try the Seafood Pot, but I don't know if it sells raw/retail.

I don't know if I have ever fried 16/20's. They usually go straight to the grill.
