Why does food in all airports suck?

I don't understand why good chefs would never want to work in the airport, have a great restaurant, have regulars who take the same flight in/out every week, and can charge a premium because they are in an airport

I must be missing out on a lot of factors. What are they?

Someone's never been to One Flew South.

Eta. The move is to more sit down dining options. You see that in any recent airport renovation of a hub city. But for the most part people want to get in and out of the airport as quick as possible.

Flights are expensive enough as it is. Why waste any money on a quick meal when you can dine at a nice place at your destination? And many layovers now are too short to get in a long meal at a nice place.

Root Down is awesome at the Denver airport.

Pappadeaux's is solid at DFW.

i get great food in Denver, San Fran and Chicago. LA has some decent options too. So does Seattle.

Not sure what you are talking about.

LGA has awful food in the American Terminal, Miami's food options suck.

I've heard the place in Atlanta is great.

The captive audience thing should not come into play if competition is thriving. If there is a TGI Fridays, and a good sports bar 10 gates down, should be no question

Edit: I don't want to get into a pissing contest, but naming 1 or 2 random spots in a couple of airports doesn't change the fact that 90% of the places to eat are nasty. And I've been to almost every major airport in the US on multiple occasions

Well LGA is the worst "major" US airport.

And you've got to remember the average traveller is a dumbass and has a panic attack if they aren't within 20 feet of their gate an hour before the flight. So a sports bar 10 gates down isn't an option.
