What's the best dish to judge a Mexican restaurant?

If you had to go to 5 Mexican restaurants, which dish would you order at all 5 to judge? (I'm not doing this, just curious.)

Something basic? Complicated?

I find myself ordering chili relleno a lot when it's my first visit.

Chips and salsa are a good gauge at first. But what about main entrees?

ETA: Agree about the salsa. That's usually the first impression.

I usually first judge on queso, and while I'm eating that I wait for a fresh order of fajitas to come by so I can get a look and smell .Although my go to order is usually enchiladas, tacos and tamales. Crappy enchilada sauce ruins a place for me.

I'll often get fajitas my first time at a place. If they make their own tortillas that goes a long way with me.

actually the best judge for a Mexican restaurant is how many lawncare trucks are in the parking lots at lunch

Tough question.

I would say anything with a homemade sauce.

Salsa is usually homemade, if not, you shouldn't be eating there.

how they arrange the re-fried beans and rice on the plate. Opposite or next to each other?...of course everyone knows the proper arrangement.
