Call Jerry Lees. They might help you.

Maxwells or whole foods if you need it today, but they are both very expensive, if you can wait till Monday go to oak grove smokehouse in Prairieville on hwy 73 very close to 42, they sell it very cheap and can answer any questions you have

A lot if AG stores carry them, Leblanc's I know has sold me some in the past.
Call one of the stores that make their own sausage. Alexander's should do it, talk to a manager.

You really need to soak it before use...

I buy my casings from OakPoint in Central, riggt down the street from Jerry Lee's. Four bucks worth will case 25 lbs sausage. At the price we're all about to pay for pork shoulder and fat back thats a deal.

The best thing is to go to an IGA / AG grocer and buy a pack. You will need to do like Wick says and rinse the salt off when packing. Post your boudin recipe please.

Jerry Lees in Central, Ronnies on Florida near Sharpe, and Bergeron's in Port Allen on Lobdell would be the places I'd check.

Lamendolas has them in the refrigerated section. Under four bucks for a pack. Rinse in cool water for about an hour.
They also sell bulk sausage seasonings. You just have to ask someone in the meat market. And Oak Grove Smokehouse as well.

Update: I found some at the new Leblanc's in Prairieville. 50' for 4 bucks and the butched said they carry larger quantities in the back. Made 15 pounds of boudin. Came out pretty good, I just need to tweak my recipe. Going to grind some fresh burger meat sometime this week.
