Irish Beef and Stout Stew (with pics!)

Being St. Paddys weekend I wanted to make a stew and also being St Paddys weekend I had a lot of beer on hand. So putting two and two together decided to incorporate the ingredients. This is what I came up with:

Started with cubes of beef chuck, browned in a stew pot for a few mins. Then removed from the pot and put on a plate to rest.



In the same pot, sautéed some onions and mushrooms. Then threw in some garlic. Sorry for the smokey pic.



Once the veg was soften, I threw in some flour to thicken and some spices (thyme, bay leaf, parsley)



Now for the big ingredient, a nice robust stout. Guinness is probably the popular choice but I went for a local brew, Nola's Irish Channel Stout. Added the can to deglaze.



Once the stout started to boil I added some tomato paste and sugar for some sweetness. Also threw in the rest of the veggies (carrots, celery) and the beef chuck (and it's juices)



I topped off the rest of he stew with chicken stock (until it covered the top of the stew) and brought to a boil. Then cover and let cook for about 2 hours.



After the 2 hours, I uncovered the cranked the heat up to thicken the stew a bit, not long 10 mins or so. And that's it! Served over green onion mash potatoes and came out great. I love food and I love beer so when I get to incorporate both into a dish it's a great thing. Hope y'all enjoyed the recipe.

very similar to what they make at Petrol Station. just have to figure out where they add in the prune juice

Didn't have any on hand but would def recommend it. The stew my look bland but it tasted great! Can tell the stout added something to the dish.

Whoa, whoa, whoa. There’s still plenty of meat on that bone. Now you take this home, throw it in a pot, add some broth, a potato. Baby, you’ve got a stew going.

I remember you saying that in a thread back in the day.

Prune juice might be one of the only things that I despise. But I can see how it would add depth to spa stew and when cooked in, I might not hate it but yet enjoy the depth it brings.

I still have three bottles of stout leftover from a food challenge a couple of months ago. Maybe I'll use one in a stew. Yours looks very good!

Nice. I have always maintained that a good stout or other dark beer makes the best base for a beef stew.

Yeah it was my first time making a stew with a beer base, def gonna use it as my go to from now on.
