Has anyone ever tried making buffaloe wings with your duck legs?

i had tabasco's buffalo style sauce the other day. it's pretty solid. only thing i'm concerned about is that the meat may be tough without cooking it down a bit.

I've done it with pheasant legs and it turns out great. Duck legs.....ehh...I don't know.

I breasted it. Butterflied the breast and stuffed with pecans cream cheese and figs. It was awesome. I saved the legs and heart too.

I mean, 2/3rds of the ducks I kill are woodies so I always have enough good ducks for pot roasting. I just rarely have duck breasts big enough to butterfly & stuff.

It couldn't fly. It had a hole in its wing the size of a half dollar.

It's not my fault it decided to be swimming out in a damned river. I had to use my killer instinct to drive the boat within range and my wits to load the gun before it could rapidly paddle into the willow trees.
