Santoku knife vs. Chef knive

Do you use each knife for different foods? If so, what types of foods do you use for each knife?

Santoku for vegetables and Chef on meats. But I'm no pro so take it FWIW.

I just use the chef's knife. I'd had santokus before, but I prefer the cutting motion of the chef's knife.

I use a Santouko for almost everything. I have a Wusthoff and a Heinkel and use both. They replace a chef's knife for me.

I mostly use the Chef's knife b/c that's what I grew up using. I use the Santoku when I have a LOT of veggies

The two serve for the same functions, but the santuko is utilized for the chopping of high water content containing veggies(e.g. potatoes) which hold onto the knifes surfaces, that is the purpose of the scalloping of the blade.

I have a couple of those 2-for-$13 santoku knives from Sam's and a Calphalon santoku. They are pretty much all I use. I like the way it works in my hand.

Me too. That much more than my big chef's knives anyway. I like the feel better for some reason. I've got a 6" chef knife that gets a lot of use.

I have a Henckels Santoku knife that I use more than any other knife by far. I use it to cut pretty much everything.
