Looking to do a raw preparation of yellowtail for a christmas day app, similar to scott conants at scarpetta,

Problem is I can not find the fish in BR, Whole foods and maxwells do not have it, anyone know a place that does?, Or am I going to have to order sashimi from a sushi joint and just use that?

TIA

That's a terrible idea. Ever thought of googling 'BR fish market' and calling a few?

Guess I should call them and see per your great suggestion, thank you.

there's a large seafood distributor in industriplex. Louisiana Seafood Exchange, IIRC. Other than that, the seafood markets in this town suck at high end specialty seafood. The demand is not there.

The only way you are going to find yellowtail is being frozen. Try LA seafood Exchange in Baton Rouge. It's a wholesale seafood company in the industriaplex area of BR near Siegen.

Most likely you will have to buy the whole side/fillet frozen so you will not be able to buy just a small amount.

Ichiban on Essen has been known to sell some of their fish if they have enough on hand.

it really is depressing that you can't find fresh seafood in the baton rouge area. my local fish monger had Chinese tilapia last time I went
