Roccos is definitely a good one. Also the chimes makes decent poboys. Georges has a decent poboy as well but they seem to get hated on. If you are willing to skimp a tad on quality but still get a pretty good poboy for the price then poboy express isn't too bad.

Poor Boy Floyd's downtown has a damn good roast beef one, several others I tried have been great.

Tramontes makes a damn good oyster or shrimp po-boy. I pretty much eat lunch every Friday during Lent there.
