Things to do with Andouille sausage?

I'm pretty sure the only thing I've ever used it for was for making gumbo. My dad made a trip back home and got me a few links of andouille. My natural inclination is to use it in a chicken and andouille gumbo but I'm curious what other dishes you all use it in.

He had made a turnip stew with some in it that I really enjoyed so it got me thinking that maybe I should use it in something other than gumbo this time around.

I make andouille and cornbread dressing for Thanksgiving and Christmas. It is always the 1st thing gone.

This is a bit overwhelming, but you can use part of this recipe from emeril. It's andouille grit cakes with a crawfish topping, but we've made the grit cakes by themselves and even cubed.

Since andouille cornbread has been mentioned, I'd say andouille crusted fish.

Shred the andouille in a food processor, mix with corn meal, batter fish and pan fry. Works great with snapper.

I had some sweet potato and andouille hash from Jolie's in Laffy that was delicious. I do not have a recipe, however.

I added artichoke hearts and a little more seasoning and hot sauce. Really good.
