Weekend 5 of 10; hunting camp cooking

I apologize for not covering weekend 4 of 10, but it was a typical thanksgiving dinner.

Now, we hit em with some deer and cheese stuffed mushrooms, fried catfish over a bed of shrimp and crab sauce piquante and bananas foster.

I did a big backstrap wrapped like that in pork belly last night. Seared then finished off in the oven. Man that's a great way to do it.

You're right.

Saturday night we hit em with a pork loin wrapped in a pork belly. Roasted her low and slow in the oven for about 6 hours. Served with some Italian style white beans and a dollop of peanut sauce. Also a buttermilk pannacotta topped with strawberries and graham crackers.
