Best cheese for pasta

Im making a cheesy chicken pasta dish and I want a cheese that is going to melt properly and give the dish the right consistency.

I know parmesan but I would like another option.

What other ingredients are you using? Fontina melts nicely.

goat and feta work well w/ sundried tomatoes and carmelized onions and garlic

I recommend making your own blend

A cheese for flavor
A cheese for bite
A cheese for creaminess.

White cheddar
Fontina
Mozzarella
Parmigiano-Reggiano
Ricotta
You can add cream cheese, sour cream...

I mean there's a number of cheeses to use; what effect are you trying to achieve?

Poivre boursin(or plain boursin) will melt very easily and be creamy and season the dish at the same time with pepper to a degree.

You making a cheese sauce, some kind of baked pasta dish, or just topping the pasta with cheese?
