I'd double that. Maybe triple because leftovers are legit.

3 gallons would make 48 1 cup servings of gumbo (that's about a 1 ladle serving, give or take a little)

Is there anything else being served? If not, I might make 4 gallons just to be safe.

I'm making the chicken and sausage gumbo and someone else is making a seafood gumbo. I'm assuming other food will be there also

Sounds like a good time. I made seafood gumbo yesterday. Wish I would have waited to make it today for game. After 4 kids and I ate it, in-laws came and got the rest so none left over

Yeah I've been at it since around nine this morning. Making all the roux is what takes forever! I usually get the roux already made but I had to Prove to the Mrs. That I knew what I was doing!

I usually allow for 12 oz per person for an all adult event and have plenty. That will account for seconds. Some folks use a lot of rice and some do not. That's for gumbo as the main course. If you're having more than one entree, 8 oz a person will likely be fine.

1 gallon = 10-12 people depending on how much your people eat. That's how we sell it at work. 30 people would be fine with 3 gallons.

ETA: RICE ON THE SIDE. I don't include rice in this measurement.

These are some solid metrics. I'd go with this if we're talking an average group of eaters with gumbo as an entree.
